my elderflower I'd all dried now and put in a brown paper bag to stop it sweating. can wait to get to use this it smells to strong may have to collect some more before it all runs out for this year and build up a nice stock pile.

Looks lovely.  You don't need much as it's really pungent.  I used 17g in my last batch as a late addition in the boil.

I'm also planning on brewing an elderflower ale this year. Is there a reason to dry it?
Was thinking about using it fresh in the whirpool or boiling for 5 Minutes.

Id consider it, but with my foraging skills I'd probably end up with Cow Parsley Ale and a trip to A&E......
