I plan on using blossom honey that's been pasteurised, diluted and added to the brew at high Krausen (as per https://byo.com/article/brewing-with-honey/ ) to get a strong honey charecter to match the commercial version.

Beer is like porn - you can buy it easily enough, but its so much more fun to make it [wink]

Done decent yeasts m8, im interested in seeing if CmL dry does anything good as well [wink]

Iv'e used it, im not a big Belgium beer fan as a rule to start with but, i got a lot of spicy / peppery notes from it.
