I am just about to order another bag of malt, l have been using lager malt as my base for a while now and have been quite happy with the results .....but before I went ahead I thought I should have a look at what I have available just now. So after three trips up the loft ladder I have discovered a cornucopia of malts which were purchased with the best of intentions but somehow have been left neglected and alone in the dark. It goes like this

Rye malt 1350g
Cararye 4000g
Roasted rye 250g
Carapils 940g
Caramunich 380g
Biscuit 940g
Crystal, from man down pub 360g
Candi sugar dark 1000g
Wheat malt 7600g
Pilsner malt 1900g
Amber 1000g
Acid malt 350g
Chocolate malt 1650g
Pale chocolate 400g
Brown malt 700g
Roasted barley 220g
Special B 1250g
Carafa 1 200g
Carafa 3 1000g

I am just going to check on my yeasts and hops and will edit this post shortly

Nice little selection there, Gregles - I can see a few dark brews in the future for you, perhaps a belgian dark or brun too 😉

You have some going to get rid of over 7kgs of wheat malt tho 😃 best get a couple of berlinners in ready for later summer supping....

50% Pilsner
50% Wheat Malt
Hallertau to 5IBUs

Get yourself some lactobacillus tabs from Holland & Barret and do a quick kettle souring. Weisse yeast

Feeling an english bitter ? I can reccomend my GK Abbot Reseve ESB as a base

Pilsner 93%
Amber 5%
Crystal 2%

But with your hops, I'd say Bitter with magnum to 35-40 IBUs, and chuck in a healthy dose of Fuggles and Bramling X for another 10 IBUs or so in the whirlpool

With a little help I could do the Berliner as I have lactobacillus tabs somewhere too. I have never tried one though would 23 litres be wise? Happy to give a bitter another go too and a dark Belgian ale would go down a treat.

I think it's one of those styles that if it comes good, 23 litres would go in a flash as you'll quaff yourself happy [rofl]  If you're worried, perhaps a 10-12L run instead ?  If you like a strong, flvourful bitter then my Abbot clone probably comes in as one of my best brews ever. You'll have your own twist tho, as your available hops are different - Abbot uses First Gold, Challenger and Fuggles

None the less, your options are fine english hops 😉
