When I put in my last ingredient order, my iPad, where I had all my recipes, was kaput. So I redid them all on my phone. For some reason I replaced the Pilsner in my witbier with Belgian pale malt.

Having revisited various sources I used for the wit, they all say to use Pilsner (plus wheat of course). One even goes so far as to say ‘never use pale ale malt’.

But I don’t want to order a kilo or so of malt online and pay £7 deliver for it. There’s nothing else I need either...

So. Will pale ale malt kill my wit?

I have used Belgian Pale Malt in my Manc Pilsner, and I reckon it will be fine in your wit. It's a bit different but not massively, still works, IMO.

I doubt youd be able to tell after your third, maybe in a side by side tasting you may tell a slight difference, id use pale if it was all I had.

Though I am tempted to put in an order and get some amylase to do a sneaky small batch brut ipa...
Got some nelson Sauvin to use up which seemed like the perfect hop for it...
