I am really like my best bitter at the moment. which had fuggles hops in and it's lovely. just thinking what other type's of hops can I use instead. it's a cracking recipe so think that's the only thing I would change is the hops for a different taste.
I like my water with barley and hops

First Gold, Challenger, Pilgrim, Progress, Endeavour are all good.

There are many choices, East Kent Goldings, Target, Northdown or Challenger are all popular, then there are lots of others bred as crosses from the above and Fuggles to try.

a good guide here https://www.morebeer.com/articles/homebrew_beer_hops

+1 plus Northdown, Brewers Gold.

Using two together is a good idea.

Pilgrim and Progress is a classic combo also.

Styrian Goldings are another option  And you don't have to use English hops. Vary things by using any hop you like really. The pubs are full of bitters that use Cascade, Amarillo etc.
