its being in a corny for a couple of weeks now.
i had a bit of a disaster after fermenting it i put it in a new fridge id bought to crash cool it. im my haste i never thought about setting the dial. anyway after a couple days i went out to the shed to bring the beer inside to keg. bugger was froze solid! took two days to defrost and i thought it might be knackered but here it is and tastes absolutely fyne. the freezing has not done any harm.

Here's my effort, all the colour from sugar, no roast malt. Trying to emulate the way the vast majority of commercial breweries used to make it (not me in the reflection [biggrin]).

Absolutely they did. There were few commercial beers after about 1880 that didn't have a shedload of sugar. Have a look at the recipes in the link further up the thread.

Those are both fine looking beers. Interesting that it froze and was fine afterwards, I'd have though it ruined.

i know of two home brewers that have a combined time brewing of more than 80 years that add sugar to most of their beer recipes .
have to say ive sampled my fair share from both and are excellent brewers.

Flaked maize and muscovado sugar were staples of home brewing in the 80s.

Both lovely looking beers, I love a mild and don't have one one at the moment so best get brewing. I use cornys for most beers but have to say a mild is really nice through a beer engine.

I wonder if honey would work out well as the sugar? Anyone tried similar?

ive never tried honey to be honest so couldn't say. be a tad more expensive to use but thats negligible.
mild is lovely through a beer engine. i do agree. its also good out of a budget barrel from experience, as are bitters.

That's where being a beekeeper comes in handy [smile] Mind you it needs to warm up a bit if I'm to get a decent yields this spring!
