I'm brewing a second batch of my Amapollo Pale Ale tomorrow. Last time I brewed it, it came out really nice. Here's the Recipe.

I'm making a few changes this time. Firstly I'm using WLP001 California Ale Yeast. I'm also using Hop pellets for the first time, so will make a slight adjustment on the hops. Also, the last time I made this the aroma hops were all Amarillo. I was thinking of mixing a little Apollo into the aroma mix this time. Anyone used Apollo late in the boil. Any ideas if it will mix well with Amarillo?

Looks good. Wouldn't think you'd need to packets of yeast though. I might be wrong.

No, that must have been an error when I first brewed the beer. Didn't notice that.

I've used Apollo a couple of times. It's very dank, the most dank hop I've come across, like weed tbh. It will pair with Amarillo I'm sure, bit I wouldn't overdo it or its likely to take over.

I suspect it's a love or hate hop. It's like Columbus that's fallen into dodgy company. In my experience anyway.
